Ingredients
1½lblean or extra-lean ground beef
2-3tbspgrated onion
2tspprepared mustard
½ - 284mlcan tomato soup (reserve remaining half can for topping)
⅓cupmilk
2large eggs, lightly beaten with fork
2tbspdry onion soup mix
½cupgraham wafer crumbs
½cupfine bread crumbs
¼tspgarlic powder
Salt and pepper, to taste
Topping:
½ - 284mlcan tomato soup
1½tbspprepared mustard
1½tbspbrown sugar
½tbspmolasses
1½tbspbalsamic vinegar
Instructions
Preheat oven to 350º
Line 9”x5” loaf pan with tin foil. Grease.
In large bowl, combine the first 12 ingredients and mix well. Press into prepared loaf pan.
Bake for ½ hour then spread topping over meatloaf. Return loaf to oven and bake for 1 hour.
Serve warm with mashed potatoes and your favourite vegetable(s).
