MEAL PLANNING – WEEK 5

Here is my suggested meal plan for the upcoming week which is Week 5 in our meal planning series. If you want to check out previous weeks’ meal plans, hotlinks to them are included at the end of this posting.

As with previous meal plans I have published, I’ve provided a list of the main ingredients for each recipe that, for the most part, would probably involve a shopping trip to the supermarket for most. However, as always, read each recipe thoroughly and carefully to create your own list as I have not listed what I consider to be “staple” items like regular milk, butter, eggs, flour, sugar, butter/shortening, oil, spices, etc.

This week, we’ll start off with a baked ham which will give us leftovers for the next day.

MONDAY

Rhubarb and Orange Muffins – This is a lovely treat to start off the week. The flavors of rhubarb and orange, along with a streusel topping, combine to make a perfect muffin marriage. Tuck these tasty muffins into the lunch bags for a treat at break.

Shopping List: rhubarb, orange, orange juice, whole wheat pastry flour, rolled oats

DinnerGlazed Baked Ham served with Creamy Scalloped Potatoes

Take your baked ham to the next level with this easy-to-make sweet glaze.

Shopping List: cured ham (*bone in), whole cloves, orange juice, honey, mustard, pineapple juice, canned pineapple rings

Side Dish: Rich and creamy Scalloped Potatoes make this the perfect side dish to serve with baked ham. A PEI favorite way to serve potatoes!

Shopping List: red potatoes, onion, milk, liquid chicken bouillon, Dijon mustard, cheddar cheese

TUESDAY

Dinner Leftover ham served with Duchess Potatoes and side vegetable of choice

Shopping List: Russet or Yukon Gold potatoes, cream/half and half/whole milk, white cheddar cheese, parmesan cheese, garlic and onion salts

WEDNESDAY

Dinner:  Chicken and Pumpkin Chili with Homemade Dinner Rolls

This hearty chili is made with ground chicken, sausage meat, pumpkin purée, and a select blend of spices to create a flavorful one-pot meal. Freezes well, too, if there are any leftovers!  Serve with nachos and/or homemade rolls.

Shopping List: For Chili: ground chicken, sausage meat, onion, celery, carrot, garlic, mushrooms, chili powder, spices, cocoa, poultry stock, red wine, canned tomatoes, tomato paste, tomato sauce, pumpkin purée, kidney beans

For Dinner Rolls: all-purpose flour, 2% milk, butter, eggs, sugar, yeast

Dessert: Applesauce and Oatcakes

A combination of sweet and tart varieties of apples are the basis for this delicious homemade applesauce that is simple to make and freezes well.

Make a batch of Oatcakes to serve with the sauce. Oatcakes are a cross between a cookie and a savory cracker. Versatile, Oatcakes can be eaten as they are as cookies, two sandwiched together with jam or date filling, or used as a base for hors d’oeuvres.

Shopping List: For the Applesauce: apples, apple juice, lemon juice, pure maple syrup

For the Oatcakes: Shortening, old-fashioned rolled oats

THURSDAY

Dinner:  Chicken and Mushroom Vol-au-Vent

An easy-to-make delectable creamed chicken filling encased in light and flaky puff pastry shells. Perfect for company fare but easy enough for weeknight meals. Serve with a side green salad.

Shopping List: chicken, celery, red pepper, onion, Parmesan cheese, chicken broth, puff pastry patty shells

Dessert: Country Farmhouse Spice Cake

Old-fashioned easy-to-make crumb cake uses standard pantry supplies. Flavored with cinnamon and cloves and dotted with raisins, this cake has a lovely tender crumb.

FRIDAY

DinnerThe Bistro’s Beefy Minestrone

An Italian-inspired hearty minestrone soup with beef and a variety of tasty and healthy vegetables and pasta cooked in a broth flavored with basil and oregano.

Shopping list: stew beef, onion, garlic, celery, carrots, canned tomatoes, tomato soup, tomato paste, stock (beef, chicken, or vegetable), Worcestershire sauce, lemon juice, spices, string beans, canned kidney beans, zucchini, elbow pasta, frozen peas, basil pesto, Parmesan cheese

Serve with the Bistro’s homemade tea biscuits.

Shopping list: all-purpose flour, baking powder, cream of tartar, unsalted butter, whipping cream, whole milk

Dessert: Leftover Farmhouse Spice Cake

SATURDAY

Dinner:  Chicken and Quinoa Salad with Star Anise and Orange Vinaigrette

This Chicken and Quinoa Salad is the full meal deal. A tasty vinaigrette with subtle undertones of licorice flavor dresses the salad for dinner.

Shopping List: orange juice, star anise pod, red wine vinegar, Dijon mustard, honey, herbs of choice, quinoa, lettuce, cooked chicken, fruits and vegetables of choice

Dessert: Blueberry Peach Crisp

This yummy Blueberry Peach Crisp features plump blueberries and sweet peaches covered with a delicious buttery streusel topping. Serve plain or with a dollop of whipped cream or a scoop of vanilla ice cream.

Shopping List:  quick rolled oats, pecans, peaches, blueberries, lemon juice, spices

SUNDAY

Sunday Breakfast: Clumpy Almond Butter Granola

A crunchy and clumpy lightly spiced granola made with almond butter, maple syrup, and honey. Super good on its own, sprinkled over oatmeal, or as a snack on the go.

Shopping List: large flake rolled oats, puffed brown rice cereal, ground flaxseed and chia seeds, coconut shavings, dried fruit, raisins, hemp hearts, coconut oil, almond butter, maple syrup, honey, spices

Dinner: Beef Bourguignon

One of the best French classic dishes, Beef Bourguignon is made with beef, pork, carrots, onions, and mushrooms all braised and slow cooked in a rich red wine and beef stock sauce. Serve over garlic whipped potatoes.

Shopping List: beef cheeks or chuck, bacon lardons, fresh herbs, celery, brandy, red wine, onion, tomato paste, garlic, beef stock, baby carrots, pearl onions, button mushrooms

Bistro Style Beef Bourguignon

Dessert: Raisin Puff (aka Plum Puff)

Raisin Puff (aka Plum Puff) is an old-fashioned dessert made with a rich raisin filling sandwiched between two layers of soft shortbread. A pure delight for raisin lovers!

Shopping List:  sultana raisins, orange juice, spices
