Here is my suggested meal plan for the upcoming week which is Week 6 in our meal planning series. If you want to check out previous weeks’ meal plans, hotlinks to them are included at the end of this posting.
As with previous meal plans I have published, I’ve provided a shopping list of the main ingredients for each recipe that, for the most part, would probably involve a trip to the supermarket for most. However, as always, read each recipe thoroughly and carefully to create your own list as I have not listed what I consider to be “staple” items like regular milk, butter, eggs, flour, sugar, butter/shortening, oil, basic spices, etc.
Lots of variety included in the meal plan this week. Beef, seafood, and chicken are prominently featured and there should be entrées to serve a variety of tastes.

MONDAY
Special Treat: Peanut Butter Coconut Energy Bites – This is a lovely treat to start off the week. Tuck one or two in to the lunch bags. These tasty Peanut Butter Coconut Energy Bites are filled with dates, rolled oats, peanut butter, ground nuts, toasted coconut, and chocolate chips. They make a convenient on-the-go-snack and are great pre- or post-workout!
Shopping List: honey dates, quick rolled oats, peanut butter, honey, coconut oil, peanuts, ground chia seeds, vanilla whey protein powder, crispy rice cereal, mini chocolate chips, coconut, hemp hearts
Dinner: Halibut Steaks with Blood Orange and Rhubarb Sauce
A citrus-based sauce served over pan-fried halibut steaks. Makes a great dinner.
Serve with choice of potato and favorite veggies.
Shopping List: halibut steaks, rhubarb, blood oranges, shallot, garlic, balsamic vinegar, pomegranate molasses, chicken stock
Dessert: Rhubarb Custard Torte
Delightful dessert featuring a shortbread base covered with a cooked rhubarb custard and topped with meringue. One of the best rhubarb desserts! Fresh or frozen rhubarb may be used.

TUESDAY
Dinner: Chicken Pot Pies served with Zesty Cranberry-Orange Sauce
Individual, made-from-scratch, double-crusted chicken pot pies are chock full of poultry chunks and vegetables in a delectable creamy filling, all encased between tender flaky pie crusts. The supreme comfort food!
Shopping List for the Chicken Pot Pies: cooked chicken, onion, carrots, celery, parsnip, turnip, potatoes, cremini mushrooms, garlic, poultry stock, whipping cream, medium cheddar cheese, Dijon mustard, Worcestershire sauce, frozen peas, lard, butter, spices
Shopping List for the Zesty Cranberry-Orange Sauce: cranberries (fresh or frozen, orange juice, apple)
Dessert: Leftover Rhubarb Torte
WEDNESDAY
Dinner: Irish Stew
A rich, hearty stew made with beef and a variety of vegetables and flavored with Guinness and red wine. Good any time of the year but a must for St. Patrick’s Day!
Shopping List: stew beef, carrots, parsnip, onion, turnip, leek, potatoes, garlic, tomato paste, Worcestershire sauce, red wine, Guinness
Dessert: Double Chocolate Chip Drop Cookies with Stout
These Double Chocolate Chip Drop Cookies are both tasty and showy. Flavored with a wee bit of stout. A treat anytime but great for a St. Patrick’s Day treat!
Shopping List: stout, semi-sweet chocolate squares, chocolate chips
THURSDAY
Dinner: Beef Pasta Casserole served with a side green salad and Whole Wheat Biscuits
This tasty Beef Pasta Casserole is an easy-to-make weeknight casserole that combines ground beef, pasta, cheese, and a tomato-based sauce.
Shopping list: For the casserole: ground beef, onion, garlic, celery, green pepper, mushrooms, tomato soup, Worcestershire sauce, beef broth, tomato paste, maple syrup, basil pesto, canned diced tomatoes, fusilli, cheddar cheese, parmesan cheese
Shopping list for the biscuits: all-purpose and whole wheat flours
Dessert: Sweet Marie Bars
Easy-to-make no-bake bars that combine peanut butter and crispy rice cereal into a base that is topped with melted chocolate and peanut butter. What’s not to love – it’s like eating candy!
Shopping List: crispy rice cereal, peanut butter, golden corn syrup, semi-sweet chocolate pieces
FRIDAY
Dinner: Classic Roasted Butternut Squash Soup with Egg Salad Sandwiches made with homemade White Bread
This classic roasted butternut squash soup is luxuriously thick, velvety smooth, and is packed full of flavorful aromatics, light seasonings, and a blend of cheeses. Pure comfort food at its finest! Pair it with Egg Salad Sandwiches for a more hearty meal.
Shopping List for the soup: butternut squash, onion, celery, carrots, parsnips, garlic, poultry stock, apple, maple syrup, parmesan and cheddar cheeses, seasonings
Shopping list for the homemade white bread: Yeast, milk, flour and general baking supplies.
For the Egg Salad Sandwiches: hard-boiled eggs, celery, red onion, prepared mustard, sweet pickle relish, salad dressing or mayonnaise, lemon juice
Dessert: Classic Raspberry Linzer Cookies
Sugar-dusted jam-filled Linzer Cookies have a tender and crisp texture and buttery flavour complemented by ground almonds and subtle spice seasonings
Shopping List: ground almonds, icing sugar, almond flavoring, grated orange rind, cardamom, cloves, cinnamon, icing sugar, seedless raspberry jam, general baking supplies
SATURDAY
Dinner: Creamy Scallop Carbonara
This restaurant-quality Creamy Scallop Carbonara is a super tasty pasta and scallop dish. Easy enough for a weeknight meal but makes a great weekend treat.
Shopping List: Parmigiano-Reggiano cheese, bay scallops, pancetta/guanciale/bacon, spaghetti pasta, onion, garlic
Dessert: Nanaimo Squares
Decadent no-bake bars that consist of three layers of a velvety custard filling sandwiched in between a chocolate-coconut-nut base and a rich chocolate ganache topping.
Shopping List: cocoa, graham cracker crumbs, coconut, pecans, whipping cream, vanilla custard powder, icing sugar, semi-sweet chocolate
SUNDAY
Sunday Treat: Currant and Orange Scones
Make these melt-in-the-mouth scones for Sunday brunch or lunch. Serve with English Double Cream (or clotted cream, if available) or butter and your favorite jam or lemon curd. Perfect with your favorite pot of brew.
Shopping List: currants, orange zest, orange juice, whipping cream
Dinner: Classic Tuna Melts with a green side salad or potato chips
Packed with flavor, these Tuna Melts, topped with melted cheddar cheese, are classic open-faced sandwiches. Great served with a side green salad or potato chips. Perfect, easy-to-prepare, Sunday night casual meal.
Shopping List: flaked white tuna (packed in water), mayonnaise/salad dressing, Dijon mustard, celery, sweet pickle relish, red onion, red or green pepper, English muffins, cheddar cheese
Dessert: Leftover Nanaimo Squares
