Hello Dolly Square (aka 7-layer Bars or Magic Bars)

This is an oldie but always a goodie! This irresistible Hello Dolly Square is believed to have started circulating c. 1960s and may have been named in honor of the Hello Dolly musical of the same era. 

Hello Dolly Square also goes by a number of different names. You may know it as Magic Bars or 7-layer Bars, for example. There are dozens of different variations and combinations of ingredients that may be found in recipes for this square (sometimes called a bar), depending on the baker. What follows is my version.

If you are looking for a square that you can whip up in a hurry, don’t want to do any mixing or stirring, and no icing, then Hello Dolly Square is for you. Basically, if you can open bags of ingredients and a can and can melt butter, you can make this square! No baking experience is required!

The method for making this square (that borders on candy, in my opinion) is simple. Butter is melted and poured into a tinfoil-lined 9” baking pan. Graham wafer crumbs are sprinkled over the butter (no stirring required). This is followed by evenly distributing a layer each of coconut, chocolate chips, chopped pecans, butterscotch chips, sea salt caramel baking chips, and another layer of coconut. This is all covered with a can of sweetened condensed milk. The square bakes for 28-30 minutes then cools to room temperature before being refrigerated for approximately 30 minutes to firm it up for ease of cutting.

Peel away the tin foil from the square and cut the square into desired sized pieces. No icing is needed for this yummy square.

The square can be made entirely with chocolate chips. However, the addition of butterscotch chips and sea salt caramel baking chips are a game changer for this square as they add a wonderful mix of flavors. If these are chips you do not normally have in your pantry, I suggest a visit to your local bulk food store where just the amounts called for in the recipe can be purchased.

Hello Dolly Square Recipe

Ingredients:

½ cup butter, melted
1¼ cups graham wafer crumbs
1 cup sweetened shredded coconut
¾ cup semi-sweet chocolate chips
1 cup chopped pecans
1/3 cup butterscotch chips
1/3 cup sea salt caramel baking chips
½ cup sweetened shredded coconut
1 – 300 ml can sweetened condensed milk

Method:

Position oven rack in center of oven and preheat oven to 350°F.

Line 9” square baking pan with tinfoil, leaving enough foil overhang on sides to grip and lift baked square from pan for easy cutting. Spray lightly with cooking spray, ensuring the sides of the pan are sprayed.

Pour melted butter into pan. Sprinkle evenly with graham wafer crumbs. Do not stir. Add a layer of coconut followed by a layer of chocolate chips. Sprinkle chopped pecans evenly over the chocolate chips. Add layers of butterscotch and sea salt caramel baking chips followed by ½ cup of coconut.

Pour the can of sweetened condensed milk evenly over the square ingredients, ensuring the entire square ingredients are completely covered.

Bake for 28-30 minutes, or just until square is set. Transfer pan to wire cooling rack and let square cool completely (in pan) to room temperature then refrigerate for approximately 30 minutes to firm up for easier cutting. Lift square from the pan using the excess foil . Peel away foil and cut square into small pieces. Keep square refrigerated or freeze in an airtight freezer container for longer storage.

Yield: 1 – 9” square
