MEAL PLANNING – WEEK 7

Here is my suggested meal plan for the upcoming week which is Week 7 in our meal planning series. If you want to check out previous weeks’ meal plans, hotlinks to them are included at the end of this posting.

As with previous meal plans I have published, I’ve provided a shopping list of the main ingredients for each recipe that, for the most part, would probably involve a trip to the supermarket for most. However, as always, read each recipe thoroughly and carefully to create your own list as I have not listed what I consider to be “staple” items like regular milk, butter, eggs, flour, sugar, butter/shortening, oil, basic spices, etc.

MONDAY

Special Treat: Cherry Loaf

Dinner: Cream of Winter Root Vegetable Soup with Rustic Oat Bran Biscuits

Made with a blend of traditional root vegetables, this silky-smooth soup is very lightly seasoned and is definitely one for the comfort food category! Perfect for those cold winter nights.

TUESDAY

Dinner: Creamy Tuna Noodle Casserole with Beet, Watermelon, and Dragon Fruit Salad

This nostalgic Tuna Noodle Casserole that has been modernized but still remains a classic comfort food dish that is easy to make and full of great flavor. The Beet, Watermelon, and Dragon Fruit Salad is a great side salad to pair with this casserole. With its bright and colorful mix of fruits and vegetables, this refreshing salad complements the casserole well. Great weeknight meal.

WEDNESDAY

Mid-week Treat: Prune and Pistachio Power Balls

THURSDAY

FRIDAY

Dinner: Sausage, Black Beans, and Pasta Casserole with a side green salad

A hearty meal, this Sausage, Black Beans, and Pasta Casserole is a perfect comfort food meal for the colder months. Casserole freezes well.

Dessert: Lemon Sponge Pudding

This easy-to-make Lemon Sponge Pudding has a creamy lemon pudding base topped with a light-as-air sponge cake. Can be served warm or chilled and it’s a great finale to any meal.

SATURDAY

Dinner: Goat Cheese and Basil Pesto Stuffed Chicken Breasts served with rice or choice of potato (e.g., Duchess or Roasted Potato Stacks are good options)

SUNDAY

Sunday Treat: Baked Eggs with Basil Pesto and Cheese

Serve these seasoned oven-baked eggs with toast points and a favorite jam. If desired, include a bowl of fresh fruit or broiled tomato halves.

Dinner: Haddock au Gratin with steamed rice and a side vegetable of choice
