While they may not be one of the more common berries today, gooseberries are a versatile ingredient and make a lovely Gooseberry Cobbler that can be served plain or dressed with a scoop of ice cream or a dollop of whipped cream.
One of the most popular pie recipes on my website is the Raspberry Cream Cheese Pie, a cross between a pie and a cheesecake. The full-scale 9” pie is a good-sized pie that can be expected to serve 6-8 people and, being in a small household myself, I often find a large pie is more than what is needed. With the smaller household in mind, I have sized my classic Raspberry Cream Cheese Pie down to fit a 7” pie plate. Just because we may be in a small household doesn’t mean we have to go without special treats and this pie is definitely a special treat!
Today, a treat for those in a single household. I am sharing my recipe for Lobster Fettuccine Alfredo for One. So, if you are in a single household and a lobster lover, this recipe is for you! I don’t often make meals just for one or two servings as my preference is to batch cook larger quantities and freeze them. However, some dishes are just simply better prepared fresh and Lobster Fettuccine Alfredo is one of them. Note that, while this recipe is scaled for one serving, the recipe is very scalable so it can be doubled, tripled, quadrupled, and so forth for the number of servings needed.
